We have service tonight. Sometimes there's food there, something hardly any. John is rather hungry right after work so I get us something before service anyway. I think I'll get him his fave. Pandas...orange chicken and mandarin beef.

But I really need to bring something for service.

Turkey, mixed veggies, choice of baked potato or rice, and a butternut squash dish I sort of made up. It tasted like pumpkin pie without the crust.

Burgers on the George Foreman. I had mine with sauteed onions and mushrooms. YUM!! And we had oven fries.

That sounds interesting. Care to share your recipe?

We had chicken and dumplings. That takes forever to make, but it's worth it. We will have leftovers for lunch.

Sure, I based it off of a pumpkin pie recipe and modified it to make it lower calorie. Feel free to change it around.

Butternut squash “pie”

2 lb butternut squash, cooked until soft
1/3 c sweetener I used Splenda whey low mixed, sugar would work too
1 can fat free evaporated milk
1tsp cinnamon
½ tsp pumpkin pie spice
2 eggs, beaten
dash of salt

To prepare squash; slice it in half, remove seeds and bake, face down, at 350° until soft (30-45 min) Allow to cool slightly, scoop out

Mix all ingredients and pour into glass pan. Bake at 425° for 15 minutes. Reduce heat to 350° and cook until knife inserted in the center comes out clean. 30-40 minutes. Serve with light cool whip if desired.

You could eat this cold like pumpkin pie, but my son liked it better warm. I cooked it in a 9x9 pan. My husband wants me to try it in a pie shell next time. It was plenty sweet, even though I used a lot less sugar than a pumpkin pie calls for. I think butternut squash must be naturally sweeter than pumpkin.

The squash wouldn't have to be exactly 2 pounds. That was the size I had. I don't think you'd want to go smaller than that, but a bigger one should work. Just make sure the flesh has been baked until all of it is soft.

We are having Taco Bake. Tomorrow is Thanksgiving Lunch after church, so I'm bringing dressing and sweet potato casserole.

I made a huge pan of lasagna. I have trouble making lasagne. I cannot make it small. I don't think I have the right pan for it. The 13 x 9 inch pan is too small for three layers of noodles. The other pan I have is enormous. I need something in between.

Cynthia, I have that same problem so I freeze half of it and bring it out later when I don't have alot of time to cook. Add some rolls or garlic bread and you are set.

I was thinking the same thing as I don't think we can even fit the pan into the fridge. We'll have to freeze some separately. We will still have enough for dinner tomorrow.

Do you really use 15 kinds of beans??

They sell bags of mixed beans for soup. I've never separated them out to be sure, but the bag says it has 15 different kinds of beans in it.

It probably won't suprise you, but I've seen those and counted the number of bean varieties. They really do have 15 beans.
